Mussels Steamed in Spicy Tomato-Cilantro Broth

INGREDIENTS

2 lb. fresh blue cultured mussels
1 1⁄2 cup bottled clam juice
3 ripe tomatoes, chopped (about 1 1/2 cups)
1⁄4 cup fresh lime juice
3 tbsp. hot pepper sauce
1 tbsp. tomato paste
5 tbsp. unsalted butter, cut into 1/2" cubes
1 cup chopped fresh cilantro
3⁄4 cup Thinly sliced green onions
1 loaf, crusty bread
dash salt and pepper

INSTRUCTIONS

    Rinse fresh blue mussels in tap water.
  2. 2
    Bring ingredients 2-6 to a boil in a large pot, stirring occasionally.

    Add mussels and butter. Cover and cook until mussels open, about 3 to 5 minutes. Discard any shells that do not open.

    Stir in cilantro and green onions. Season with salt and pepper.
  5. 5
    Divide among bowls and serve with crusty bread.
