Mussels with Rotini Pasta

INGREDIENTS

3 lb. fresh cultured blue mussels
1⁄2 cup water
500 g rotini pasta
1 large onion, chopped
2 garlic cloves, crushed
1 green pepper, chopped
1 red pepper, chopped
1 cup cauliflower florets
1 cup broccoli florets
3 tbsp. sundried tomatoes, chopped
1⁄4 cup black olives, chopped
1⁄2 cup mushrooms, chopped
1⁄2 cup cream
1⁄4 cup white wine
1 pinch basil, rosemary, thyme
1 pinch salt and pepper, to taste

INSTRUCTIONS

    Rinse fresh blue mussels in tap water. Add water to a large covered pot. Add the mussels and cover. Steam 5 to 7 minutes , cool and remove from shell. Set aside.

    Cook pasta.

    In a sauce pan, gently sauté onion and garlic. Add green and red peppers, cauliflower and broccoli, sundried tomatoes, black olives, and mushrooms. Add herbs and seasoning and stir fry gently for 1 to 2 minutes.

    Add mussels, cream, and white wine. Simmer for a few minutes. Pour over cooked pasta and grate some parmesan cheese over top.

    Garnish with chopped parsley. Be adventurous and add shrimp and scallops, too.
