Georgia Pecan Torte

INGREDIENTS

6 egg yolks
1 cup sugar
1 oz. lemon juice
3 tsp. cinnamon
1 1/2 cup chopped Georgia pecans
1/2 cup white bread crumbs
1/4 cup all-purpose flour
6 egg whites

INSTRUCTIONS

    Preheat oven to 350°F.

    Beat egg yolks. Add sugar gradually to yolks and beat until very creamy. Add grated rind and juice of one lemon. Grind pecans in a nut grinder. Mix pecans, cinnamon, toasted white bread crumbs and flour. Add to egg yolk mixture. Beat 6 egg whites until stiff, but not dry. Fold egg whites into batter.

    Bake at 350°F for 40 minutes in an ungreased loaf pan or round layer cake pan. Cool in pan. Dust with confectioners sugar. This is a delicate cake, remove from pan carefully.
