California Almond Dukkah

INGREDIENTS

7 1/2 oz. whole almonds, raw
3/4 oz. olive oil
1 1/4 oz. sesame seeds, whole
1/2 oz. coriander seeds, whole
1/4 oz. cumin seeds, whole
1/4 oz. black peppercorns, whole
1/8 oz. kosher salt
1/8 oz. sugar, granulated
1/8 oz. cayenne 

INSTRUCTIONS

    Toast almonds in an oven that has been preheated to 350ºF until fragrant, about 10 minutes.

    In a food processor, chop the nuts finely after they have cooled.
  3. 3
    Toast sesame seeds, coriander, cumin, and peppercorns one at a time until fragrant.
  4. 4
    Grind the seeds to a medium fine grind in food processor.
  5. 5
    Combine with the ground almonds and remaining ingredients and mix well.
  6. 6
    Store in an air tight container under refrigeration.
