1 ripe pineapple

    Preheat oven to 150°F. Peel pineapple; remove eyes. Trim pineapple to form a 4-inch cylinder; save trimmings. Slice pineapple crosswise in thin slices; remove core from each slice with apple corer. Place pineapple trimmings and slices on parchment-covered baking sheets. Bake until dry but still pliable (1 hour with convection; about 3 hours in regular oven). Set aside 12 rings; julienne remaining rings and trimmings.
