Grilled Lamb Cutlet

INGREDIENTS

300 g lamb cutlet
30 g green bell pepper
30 g red bell pepper
30 g yellow bell pepper
30 g eggplant
300 g potato
40 ml fresh cream, divided
60 g butter, divided
10 ml milk
4 g salt, divided
2 g white pepper
20 g fresh green pepper corn
2 g fresh black pepper
10 g onion
2 g lime
75 g beef demi glace
20 g cherry tomato
5 g fresh thyme
4 g fresh rosemary

INSTRUCTIONS

    Clean the lamb, then seasoning well after grilled
  2. 2
    Prepare the puree
  3. 3
    Cut the vegetables into small cubes. Saute with olive oil and season well. Add fresh thyme.

    Prepare the sauce. Mix all the ingredients, such as fresh green pepper corn, 2 g of salt, fresh black pepper, onion, 20 g of fresh cream, 10 g of butter, lime and beef demi glace.

    Moldered the puree. Add the sautéed vegetables and then the grilled lamb. At the end, finalize with the sauce and the fried cherry tomato on top of the vegetables. Add the fresh leaves.
