Steamed Mussels

INGREDIENTS

2 tbsp. diced celery
2 tbsp. diced onions
6 lemon wedges
1 lb. fresh cultured blue mussels
1⁄2 cup water, dry white wine, or beer (optional)
1 pinch cracked black pepper, to taste
1⁄4 margarine or butter, melted
1 pinch cayenne pepper

INSTRUCTIONS

    Rinse the fresh blue mussels in tap water.
  2. 2
    Place water, wine or beer, celery, onion and mussels in a 5 qt. (4 ¾ L) pan.
  3. 3
    Cover and steam over high heat until mussels open (5-8 minutes).
  4. 4
    Squeeze lemon juice over mussels, sprinkle with pepper and serve with melted butter or margarine for dipping.
