Blue Mussel Marinière

INGREDIENTS

5 lb. fresh cultured blue mussels
1 celery stalk, coarsely chopped
1⁄2 cup white wine
1 garlic clove, diced
1⁄4 cup green onion, chopped
1 tsp. dried thyme
1 bay leaf

INSTRUCTIONS

    Rinse fresh blue mussels in tap water.
  2. 2
    To a large lidded pan, add white wine, chopped onion, celery, garlic, bay leaf and thyme. Bring to a boil.
  3. 3
    Add fresh blue mussels to boiling liquid. Cover and steam until mussels open, about 5 to 7 minutes.
  4. 4
    Spoon the fresh blue mussels with shells into a large bowl, pouring broth over.  Serve with french fries or your favourite bread.
