Marinated Blue Mussels

INGREDIENTS

2 lb. fresh cultured blue mussels
1 cup water
1⁄4 cup parsley sprigs
1 large garlic clove
1⁄4 cup olive oil
2 tbsp. lemon juice
2 tbsp. white vermouth
1⁄4 tsp. salt
1 dash pepper

INSTRUCTIONS

    Rinse fresh blue mussels in tap water. Steam in water or white wine just until shells open. Do not overcook. Discard any mussel that does not open.

    Arrange mussels in shells on a serving platter.
  3. 3
    Chop parsley and garlic in a blender. Add olive oil, lemon juice, vermouth, salt and pepper and blend.

    Pour marinade over mussels in shells. Cover and chill for one hour.
