Crispy Blue Mussels

INGREDIENTS

1 cup fresh cultured blue mussel meats, cooked and shucked
1 cup dry bread crumbs
1 egg
2 tbsp. water
1 cup vegetable oil

INSTRUCTIONS

    Rinse fresh blue mussels in tap water.
  2. 2
    Place in large pot and steam until the shells open (5-7 minutes).
  3. 3
    Take the mussel meat out of the shells (discard shells).  
  4. 4
    Roll the mussels in bread crumbs.  
  5. 5
    Beat egg and combine with water.      
  6. 6
    Dip breaded mussels in egg mixture then roll in crumbs again.

    Drop into the vegetable oil heated to 375° F (190° C) for 2-3 minutes.

    Drain well. Serve as is or try dipping in your favourite aioli, mayo or sauce.
