Island Steamed Blue Mussels

INGREDIENTS

2 lb. fresh cultured blue mussels
onion, chopped
2 garlic cloves, minced
2 tbsp. oil
1 cup white wine or chicken broth
2 tbsp. chopped parsley

INSTRUCTIONS

    Rinse fresh blue mussels in tap water. 
  2. 2
    In a large saucepan, sauté onion and garlic in oil. 
  3. 3
    Add fresh blue mussels and wine or broth. 
  4. 4
    Cover and cook for 5 to 7 minutes or until the shells open. 
  5. 5
    Serve garnished with parsley.
