MAD Mussels

INGREDIENTS

2 lb. fresh blue cultured mussels
1 lemon juiced
1⁄2 cup water
1 tsp. chipotle liquid
1 tsp. chili powder
1 egg
1 cup ice cold water
1⁄2 cup flour
1⁄2 cup Corn starch
2 cup vegetable oil (for frying)

INSTRUCTIONS

    Rinse mussels under tap water and drain.
  2. 2
    Place mussels in a heavy bottom pan with ½ cup of water and juice from 1 lemon.
  3. 3
    Cover and place on high heat for 5-7 minutes or until shells fully open.

    Remove mussels from pot and take the meat out of the shells, set aside.

    For Spicy Tempura Batter: Sift flour cornstarch and chili powder together.

    Beat the egg slightly. 
  7. 7
    Add the chipotle liquid and ice water.

    Incorporate the dry ingredients to the liquid mixture. Be sure not to over mix. Heat oil to 350° F.

    Dredge mussels in batter and carefully place in hot oil.

    Fry for 2-3 minutes until crispy.
