Cream Sauce Beer and garlic Steamed Mussels

INGREDIENTS

24 oz. Beer
1 tsp. butter
juice of 1 lemon
1 clove garlic, chopped
250 ml 35% Whipping cream
1 tsp. salt
3 lb. fresh cultured blue mussels
1⁄2 cup red onion, chopped
1⁄4 cup parsley, chopped

INSTRUCTIONS

    Rinse fresh blue mussels in tap water and set aside.
  2. 2
    In large stockpot, place beer, salt, butter and lemon juice. Cover and simmer.
  3. 3
    Add mussels, chopped red onion and chopped garlic. Steam until mussels open.

    To reserve juice, add whipping cream and reduce to 2 cups.
  5. 5
    Add chopped parsley and pour over mussels.
