White Wine Mussel Marinara

INGREDIENTS

2 lb. fresh cultured blue mussels
1 clove garlic, minced
1⁄4 cup olive oil
1⁄4 cup dry white wine
1⁄2 tsp. Chilli peppers
1 bunch fresh parsley, finely chopped

INSTRUCTIONS

    Rinse fresh blue mussels in tap water and set aside.
  2. 2
    Sauté garlic in oil until lightly browned. Add fresh blue mussels, wine, chilli peppers, and parsley.
  3. 3
    Cover and cook for 5 to 7 minutes, or until mussels are open.
  4. 4
    Pour into a large bowl and serve with crusty bread or potato wedges.
