Sunshine Seafood Salad

INGREDIENTS

16 cups cooked wild rice
3 lb. imitation crab (surimi)
8 oz. sliced green onions
12 oz. olive oil or vegetable oil
4 oz. lemon juice
1/2 cup chopped fresh parsley
2 tbsp. sugar
2 tbsp. grated lemon peel
2 tbsp. dijon mustard
1 tbsp. lemon pepper

INSTRUCTIONS

    In large bowl, combine all salad ingredients such as: wild rice, imitation crab, & sliced green onions; toss. Set aside.
  2. 2
    In separate bowl, whisk together all dressing ingredients such as: oil, lemon juice, parsely, sugar, lemon peel, mustard, & lemon pepper. Pour over salad; toss to coat.
