Bibb Lettuce Salad with Candied Pecans, Cambozola and Pomegranate Vinaigrette

INGREDIENTS

1 lb. (about 12 cups) fresh bibb lettuce torn into bite sized pieces
1/4 tsp. kosher salt
1/8 tsp. freshly ground black pepper
2.0 cups of Candied Pecans Magnifying_glass
1.5 cups of Pomegranate Vinaigrette Magnifying_glass
3/4 cup fresh pomegranate seeds, optional
12 oz. Cambozola cheese, cut into 6 (2 oz.) wedges

INSTRUCTIONS

    Combine the lettuce, salt and pepper in a large bowl. Drizzle the vinaigrette over the lettuce and toss until well combined. Evenly divide the salad among six plates. Top each serving with 1/4 cup of the pecans and 2 tbsp. of pomegranate seeds, if using. Arrange a wedge of Cambozola cheese on each salad and serve immediately.
