INGREDIENTS

1 cup packed brown sugar
3/4 cups granulated sugar, divided
1/2 cup butter
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 1/2 cups fresh rhubarb, cut fine
1 tsp. cinnamon

INSTRUCTIONS

    Cream together brown sugar, 1/2 cup granulated sugar and butter. Add egg and vanilla. Beat until well-blended. Sift together flour, baking soda and salt. Add to creamed mixture alternately with buttermilk. Stir in rhubarb. Pour into buttered 9"x13" pan. Mix together remaining 1/4 cup granulated sugar and cinnamon. Sprinkle evenly over top of cake. Bake at 375° F for 30 to 35 minutes. Remove from oven and place on cooling rack. Serve warm or cool.
