Perfect Spice Cake

2 1/4 cups sifted cake flour
1 tsp. baking powder
1 tsp. salt, plus dash for frosting
1 tsp. cinnamon
3/4 tsp. baking soda
1/4 tsp. cloves
1/16 tsp. pepper
3/4 cup butter
1 3/4 cups sugar, divided
1 1/2 cups firmly packed brown sugar, divided
2 tsp. vanilla, divided
3 eggs
1 cup buttermilk
1 1/2 cups chopped dates
1/2 cup orange juice
1 tsp. grated orange peel
1/4 cup walnuts
2 egg whites, unbeaten
1 1/2 tsp. light corn syrup
1/4 tsp. tartar cream
3 tbsp. cold water
3 oz. cream cheese

    Cake: Sift together dry cake ingredients such as cake flour, baking powder, 1 tsp. salt, cinnamon, baking soda, cloves and pepper. Set aside. Cream butter, 1 cup sugar and 3/4 cup brown sugar until light and fluffy. Add 1 tsp. vanilla. Add eggs, one at a time, beating after each addition. Add dry ingredients alternately with buttermilk; beat well. Pour into two 9" buttered and floured cake pans. Bake at 350° F for 30 minutes or until toothpick inserted in center comes out clean. Cool cake in pan for 10 minutes. Remove from pan and cool completely.

    Filling: In saucepan, combine dates and orange juice. Cook at medium heat and stir until dates are tender and mixture is thick, about 2 to 3 minutes. Add orange peel. Cool. Add walnuts. Spread filling between cake layers.

    Frosting: Place all frosting ingredients such as egg whites, 3/4 cup brown sugar, 3/4 cup sugar, syrup, tartar cream, cold water and dash salt in top of double boiler (do not heat yet). Beat 1 minute. Place over boiling water and beat constantly for 7 minutes. Remove from heat and add vanilla; cool to lukewarm. Transfer beaters from frosting to a separate bowl and add cream cheese; beat until smooth, then gently fold cheese mixture into the frosting. Do not beat. Spread frosting on cake.
