INGREDIENTS

2 cups vanilla wafer crumbs (about 60 cookies)
1/2 cup butter, melted
2 lb. cream cheese, softened
1 1/3 cups 4tbsp. sugar, divided
4 eggs
4 tsp. vanilla, divided
2 cups sour cream
Cherry or strawberry pie filling, as needed

INSTRUCTIONS

    Crust: Combine crumbs and butter; press onto bottom of 13"x9" pan.

    Filling: Combine cream cheese and 1 1/3 cups sugar, mixing at medium speed on electric mixer until well-blended. Add eggs, one at a time, mixing well after each addition. Blend in 2 tsp. vanilla; pour over crust. Bake at 375°F for 30 minutes. Let stand 15 minutes. Increase oven temperature to 425°F.

    Topping: Combine sour cream, 4 tbsp. (1/4 cup) sugar and 2 tsp. vanilla. Spread over cheesecake. Bake 10 minutes. Cool; chill. Serve with cherry or strawberry pie filling.
