INGREDIENTS

1 1/2 cups butter, divided
2 3/4 cups sugar, divided
3 eggs
1 tsp. vanilla
3 1/4 cups cake flour
1 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. salt
1 1/4 cups eggnog
2/3 cup chopped red maraschino cherries, well-drained
1/3 cup chopped green maraschino cherries, well drained
1 1/2 tsp. cornstarch
1/2 cup half-and-half
1/2 tsp. rum extract

INSTRUCTIONS

    Beat 1 cup butter and 1 3/4 cups sugar until light and fluffy. Blend in eggs and vanilla. Add combined dry ingredients alternately with eggnog, mixing well after each addition. Stir in cherries. Pour into greased and floured 10" fluted tube pan or tube pan. Bake at 325°F for 1 hour to 1 hour and 10 minutes or until wooden pick inserted in center comes out clean. Cool 15 minutes, remove from pan. Serve warm or at room temperature with butter sauce.

    Butter Sauce: Combine 1 cup sugar and cornstarch in saucepan; gradually add half-and-half. Add 1/2 cup butter, bring to boil over medium heat, stirring constantly. Stir in rum extract.
