Chantilly Citrus Ring

INGREDIENTS

11 oz. mandarin orange sections, canned
1/2 cup sugar
1 envelope gelatin unflavored
1/2 cup orange juice
1/4 cup lemon juice
2 eggs, beaten
1 cup large curd cottage cheese
3 oz. cream cheese, cubed and softened
1 banana, sliced
1/2 cup chopped walnuts

INSTRUCTIONS

    Drain oranges, reserving syrup. Add water to syrup to make 3/4 cup liquid. In saucepan, combine sugar and gelatin; add syrup mixture, orange and lemon juices. Heat until gelatin is dissolved. Gradually stir about half of mixture into eggs; return all to saucepan. Cook and stir two minutes; remove from heat. Add cottage and cream cheeses; beat until smooth. Chill until partially set. Fold in orange sections, banana slices and nuts. Turn into 5, 1/2 cup ring mold. Chill overnight; unmold.
