Baked Wisconsin Cheesecake

INGREDIENTS

1 cup graham cracker crumbs
11 1/2 oz. sugar, divided (about 1/4 cup + 1 2/3 cups + 1 tbsp.)
1/4 cup butter, softened
1 lb. cream cheese, softened
4 eggs
1/4 cup lemon juice
1 cup sour cream
1 tbsp. grated lemon peel

INSTRUCTIONS

    Combine graham cracker crumbs and 1/4 cup sugar; add 1/4 cup softened butter. Mix until butter is thoroughly combined with crumbs; press onto bottom of 9" springform pan.

    Combine cream cheese and 1 2/3 cups sugar, mixing at medium speed on electric mixer until well-blended. Add eggs, one at a time, mixing well after each addition. Blend in lemon juice; pour over crust. Bake at 350°F for 1 hour.

    Combine sour cream, lemon peel and 1 tbsp. sugar; carefully spread over cheesecake. Bake and additional 5 minutes. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
