Confetti Mushroom Herb Egg Wraps

INGREDIENTS

olive oil or butter
1 1/2 cups sliced fresh button mushrooms
1/3 cup finely chopped red peppers
4 eggs, slightly beaten
1 1/2 tbsp. chopped fresh basil
1 1/2 tsp. chopped fresh oregano
1 1/2 tsp. chopped fresh chives
2 (7") spinach tortillas, warmed
6 tbsp. finely shredded mozzarella cheese

INSTRUCTIONS

    Heat a small amount of olive oil or butter in sauté pan over high heat. Add a single layer of mushrooms. Leave the mushrooms alone as they sauté, be patient as they turn red-brown then turn and sauté until second side turns similar color. Season to taste, set aside in bowl.

    Using same pan, sauté peppers 1 to 2 minutes. Add eggs and herbs; cook until egg mixture is set, gently pulling cooked outer portion to center as eggs set. Add sautéed mushrooms.

    Spoon egg mixture on tortillas within 1/2" of edge and sprinkle with cheese. Roll up tortilla. Let stand about 1 minute. Cut into 6 or 7 pieces and serve.
