Roasted Mixed Mushroom Pizza

INGREDIENTS

1 pizza shells, unbaked
8 oz. Mozzarella, first
6 oz. grilled chicken breast
1 batch lightly roasted mixed mushrooms
2 1/4 oz. shelled walnuts, bite size pieces
1 tsp. fresh garlic, chopped
2 tbsp. Parmesan cheese, shredded (about 3/4 oz.)
2 oz. Mozzarella, second
1 tbsp. fresh chives, cut into 1/2"
1/2 oz. olive oil
3/4 oz. butter, melted
3 oz. medium white mushrooms, sliced 1/8"
6 - 8 Shiitake mushrooms, small, stem removed, cut in quarters (about 1 3/4 oz. stem off)
3 oz. baby portabella mushrooms, sliced 1/8"

    Shape shell.

    Top in listed order.

    Bake until crust is golden, cheese at center is bubbly hot.

    Sprinkle on.

    Pesto Variation: Very lightly brush the unbaked pizza shell within the rim with 2 tbsp. basil pesto before adding the first layer of Mozzarella.

    For Roasted Mixed Mushrooms: Mix together olive oil and melted butter. Toss together mushrooms, then add butter/olive oil mixture and toss. Place on a sheet pan, do not crowd product. Lightly roast at 400ºF until about 5 to 8 minutes to just begin to reduce the mushrooms and drive off moisture. (Do not over cook, as mushrooms will further roast while the pizza is cooking).
