INGREDIENTS

24 Portabella mushroom caps
Olive oil or melted butter, as needed
1 lb. 8 oz. Canadian bacon, small dice, about 3 cups
1 lb. 8 oz. chopped tomato, well drained, about 3 cups
12 oz. Gouda cheese, shredded, about 3 cups
Salt, to taste
Pepper, as needed
Chopped parsley, as needed, for garnish

INSTRUCTIONS

    Portabella caps: Stem 24 Portabellas (about 2 1/2 oz. each) reserving stem for other use. Brush with olive oil or melted butter as needed; season well with salt and pepper. Arrange on sheet pan. Bake at 500ºF until mushrooms are tender, about 8 minutes; cool.

    Layer 2 tbsp. bacon and 2 tbsp. tomato in each Portabella cap; lightly sprinkle with salt and pepper. Top each with 2 tbsp. cheese. Cover and refrigerate.

    Per Order: Bake Portabella caps in a 500ºF oven until cheese is melted and mushroom is heated through, about 8 minutes. Sprinkle with parsley.
