Fresh Mushroom and Beef Lover's Pizza

3/4 cup creamy Roquefort cheese, at room temperature
2 tbsp. unsalted butter, at room temperature
1 garlic clove, chopped finely
6 oz. sirloin steak, cooked and sliced 1/8” x 2”
Salt, to taste
Black pepper, to taste
3 tbsp. Madeira wine
2 tbsp. canola oil, divided
1/4 cup red pepper, julienned
1/4 cup yellow pepper, julienned
1/4 cup gold pepper, julienned
2 green onions, sliced thinly
1 portabella mushroom, stemmed and thinly sliced
3 oz. white mushrooms, sliced 1/4" thick
1 unbaked pizza dough shell, 12"
4 oz. Roma tomato, sliced
1 tbsp. chopped parsley

    Beat together cheese, butter and garlic until smooth; reserve.

    Lightly season beef with salt and pepper; toss with wine and 1/2 tbsp. oil; reserve. Toss peppers and onion with 1/2 tbsp. oil; reserve. Toss mushrooms with 1 tbsp. oil; reserve.

    Spread half the cheese mixture over pizza shell. Layer beef, mushrooms, tomatoes, peppers and onions over cheese. Dot with remaining cheese mixture.

    Bake at 500ºF until pizza is hot and bubbly, about 12 minutes. Remove from oven; sprinkle with parsley.
