Exotic Mushroom & Shrimp Pizza

INGREDIENTS

1/4 cup finely chopped onion
2 1/2 tbsp. olive oil, divided
1 clove garlic, finely chopped
1/2 tsp. sweet paprika
1/4 tsp. salt
1/4 tsp. pepper
Cayenne pepper, to taste
1/2 cup roasted red pepper puree
6 oz. medium shrimp, peeled, deveined and cut in ½ in. pieces
2 oz. Shiitake mushrooms, stemmed and sliced
2 oz. oyster mushrooms, cut into bite-size pieces
1/2 cup smoked mozzarella, shredded
1/2 cup Mozzarella cheese, shredded
1 cup shredded spinach leaves
1 unbaked pizza dough shell, 12"

INSTRUCTIONS

    Sauté onion in 1/2 tbsp. oil until soft, about 2 minutes. Stir in garlic, paprika, salt, pepper, cayenne and red pepper puree; cook 2 minutes. Reserve.

    Toss shrimp in 1/2 tbsp. oil; reserve. Toss mushrooms in 1 1/2 tbsp. oil; reserve. Spread reserved sauce over pizza shell. Sprinkle with cheese, top with shrimp and mushrooms.

    Bake at 500ºF until pizza is hot and bubbly, about 10 minutes. Remove from oven; sprinkle with spinach.
