INGREDIENTS

1 cup grade b maple syrup
1/4 cup vegetable oil
1 tbsp. vanilla extract
1/2 cup toasted wheat germ
1/4 cup sesame seeds
1/2 cup shredded unsweetened coconut
3 1/2 cups rolled oats
1/2 cup pumpkin seeds
1/2 cup coarsely chopped almonds
1 cup mixed dried fruits

INSTRUCTIONS

    Preheat oven to 225°F. In a saucepan boil maple syrup until it is reduced to 2/3 cup. Remove from heat. Stir in oil and vanilla.

    In a large bowl, toss wheat germ, sesame seeds, coconut, oats, pumpkin seeds and almonds. Add syrup mixture. Spread on a baking sheet. Bake stirring occasionally until golden brown 1 to 1 1/2 hours.

    Cool on sheet for 10 minutes. Transfer to a large bowl and stir in dried fruits. Cool completely before storing in an air-tight container.
