Grandma's Lemon Pie

INGREDIENTS

1 crust, single 9" pie crust, baked
1 cup sugar, granulated
1/4 cup cornstarch
12 ounce water, cold
3 large egg yolks, slightly beaten
4 fl oz lemon juice, fresh
1 tbsp lemon zest, from one lemon
1 tbsp butter, salted

INSTRUCTIONS

    Mix sugar, cornstarch and water in saucepan until smooth.

    Stir in egg yolks; bring to boil, stirring constantly.
  3. 3
    Boil 1 min. or until thickened. Remove from heat.
  4. 4
    Stir in zest, juice and butter. Cool to room temperature.
  5. 5
    Spoon into pie crust.

    Cool completely.

Top with whipped cream or standard meringue if desired.
