Shell Fish Stock

INGREDIENTS

2 tablespoons oil
2 tablepoons paprika
1 tablespoon garlic, minced
5 pound lobster, shells only, and shrimp shells
5 gallon water, tap
4 cup tomato puree, canned, with salt
4 tablespoons salt
3 each bay leafs
1 cup onion, rough chop
1 cup celery, rough chop
3 tablespoons peppercorns, whole

INSTRUCTIONS

    Heat a rondo or stock pot and add oil.
  2. 2
    Sear all of the shells (lobster or shrimp).
  3. 3
    Add garlic, paprika, and tomato paste to cook for a few more minutes.
  4. 4
    Combine all remaining ingredients and bring to a boil
  5. 5
    Reduce heat and simmer for 20 minutes
  6. 6
    Strain stock through a china cap and discard shells
  7. 7
    Cool according to HACCP.
