INGREDIENTS

2-1/2 qt. water
2-1/2 cups distilled white vinegar
1-1/4 cups sugar
1/4 cup coarse salt
10 cups thinly sliced green cabbage, about 1 lb. 8 oz.
1-1/4 cups grated carrot, about 5 oz.
3 tbsp. grated fresh ginger

INSTRUCTIONS

    Combine water, vinegar, sugar and salt in saucepot; bring to a boil. Combine cabbage, carrot and ginger in heatproof bowl. Pour vinegar mixture over cabbage; let cool. Refrigerate.
