INGREDIENTS

1/3 cup clarified butter
1/3 cup all-purpose flour
3 cups veal stock
1/4 cup heavy cream
1 tbsp. kitchen bouquet
2 tsp. salt
1/8 tsp. ground black pepper

INSTRUCTIONS

    Combine butter and flour in saucepan; cook and stir over low heat until roux is light blond. Stirring constantly, slowly add the stock. After all stock has been added, simmer 15 minutes, stirring occasionally.

    Stir in cream, Kitchen Bouquet, salt and pepper; strain. Keep warm.
