INGREDIENTS

2 cups onions, sliced
1 cup carrots, sliced
3/4 cup celery, sliced
1 whole garlic head, cut in half
2 tbsp. olive oil
2 tbsp. tomato paste
3 cups dry sherry
veal stock
10 fresh sage leaves

INSTRUCTIONS

    Sauté onions, carrots, celery and garlic in oil in large roasting pan over high heat until light brown. Stir in tomato paste until blended, then sherry. Reduce by 1/3. Stir in veal stock and sage.
