INGREDIENTS

8 cups dry white wine
6 cups veal stock
1/4 cup cornstarch
6 tbsp. water
salt and ground black pepper, to taste

INSTRUCTIONS

    Reduce wine to 2 cups. Add stock; bring to a boil. Simmer 10 minutes.

    Dissolve cornstarch in water; add to wine mixture.

    Cook and stir until sauce thickens and boils for 1 minute.

    Season with salt and pepper.
