INGREDIENTS

1 cup button mushrooms, finely chopped
2/3 cup carrots, minced
2/3 cup celery, minced
1/2 cup onion, minced
1/4 cup fresh sage, chopped
1/4 cup fresh thyme, chopped
5 tbsp. unsalted butter
1 lb. 6 oz. ground veal (IMPS/NAMP 396)
1-1/2 oz. glace de viande
1 cup grated parmesan cheese
2/3 cup ricotta cheese
kosher salt and pepper, to taste

INSTRUCTIONS

    Sauté mushrooms, carrots, celery, onion, sage and thyme in butter until tender. Add ground veal; cook slowly, until veal is not pink, breaking veal up into small crumbles. Add glace de viande; cook 2 to 3 minutes to cook off juices. Spread in sheet pan; cool.

    Combine veal mixture with Parmesan and ricotta cheeses. Season with salt and pepper.
