INGREDIENTS

9 (4-1/2 lb.) yellow tomatoes
3 oz. fresh herbs (basil, thyme, oregano)
1 tbsp. salt
3/4 tsp. ground black pepper
1-1/2 cups chopped shallots
1-1/2 cups dry white wine
1 tbsp. black peppercorns
1-1/2 lb. unsalted butter, softened

INSTRUCTIONS

    Puree tomatoes, fresh herbs, salt and ground pepper in food processor until smooth.

    Bring shallots, wine and peppercorns to a boil; reduce by _. Stir in tomato puree; heat until hot.

    Reduce heat to very low. Gradually whisk in butter just until melted and blended. Do not boil. Strain sauce; adjust seasonings. Keep warm.
