INGREDIENTS

1/3 cup chopped onion, about 1-1/2 oz.
1 tbsp. chopped fresh garlic
1 tsp. crushed red pepper flakes
1/4 tsp. dried oregano leaves
2 tbsp. olive oil
28 oz. canned tomatoes, broken up
1/2 tsp. salt
1/2 tsp. pepper
3 cups pureed roasted red peppers

INSTRUCTIONS

    Sauté onion, garlic, pepper flakes and oregano in oil until onion is tender. Add tomatoes, salt and pepper; simmer 15 to 20 minutes. Puree tomato mixture in blender. Combine tomato puree and red pepper puree; adjust seasonings. Keep warm.
