Mushroom Curry

INGREDIENTS

200 g mushrooms
50 g onion
1 tbsp. peanut oil
1 tsp. curry powder
150 g coconut milk
1 dash of chili powder
1/4 cup natural soy yogurt
1 tbsp. chopped cilantro

INSTRUCTIONS

    Chop onion.
  2. 2
    Wash mushrooms, chop in quarters.
  3. 3
    Sweat mushrooms, remove excess water. Reserve.
  4. 4
    Sauté onion in peanut oil.
  5. 5
    Add curry powder.
  6. 6
    Add coconut milk, bring to a boil. Turn down heat to low heat.
  7. 7
    Add mushrooms, chili powder and yogurt.
  8. 8
    Sprinkle cilantro on top when ready to serve.

Serve with rice.
