Eggplant paste

INGREDIENTS

350 g eggplant
2 tbsp. olive oil
50 g onion
1 garlic clove
1/2 cup bread crumbs
1/4 cup natural soy yogurt
1/4 cup chopped parsley

INSTRUCTIONS

    Poke eggplant with fork. Spread olive oil on eggplant, grill on both sides.

    Bake at 200ÂșC until ready.
  3. 3
    Peel, put in blender. Add chopped onion, chopped garlic clove, bread crumbs, yogurt and parsley. Blend well.
