INGREDIENTS

500 g seitan
200 g eggplant
200 g ripe tomatoes
3 garlic cloves
2 tbsp. bell pepper paste
Salt, to taste

INSTRUCTIONS

    Prepare a paste with the cloves of garlic and salt with the aid of a mortar and pestle.

    Chop seitan into cubes and rub with the paste. Then rub with bell pepper paste, reserve for 1 hour.

    Chop eggplant roughly. Concasse tomatoes and chop roughly.
  4. 4
    Heat olive oil and sauté the seitan.
  5. 5
    Add eggplant and tomato, mix well, allow to stew on low heat for 20 minutes. Add water if/as needed. Rectify seasoning before serving.
