Portuguese Gazpacho

INGREDIENTS

3 garlic cloves
3 tbsp. olive oil
3 tbsp. vinegar
50 g cucumber
200 g ripe tomatoes
100 g green bell pepper
200 g day old bread
Oregano, to taste

INSTRUCTIONS

    Prepare a paste with the cloves of garlic and salt with the aid of a mortar and pestle.
  2. 2
    Concasse the tomatoes. Reduce 100 g to puree and chop in to small cubes the other 100 g.
  3. 3
    Chop the cucumber in to small cubes. Slice the green bell pepper thinly.
  4. 4
    Place the garlic paste in the bottom of the serving bowl.
  5. 5
    Add olive oil, vinegar, oreganos and the tomato puré.
  6. 6
    Add the chopped tomato, cucumber and bell pepper.
  7. 7
    Add 1.5 L of ice cold water.
  8. 8
    When ready to serve, add the bread previously chopped in small cubes. Serve cool.
