Black Eyed Bean Soup

INGREDIENTS

2 cups black eyed beans
100 g Onion
4 tbsp. olive oil
3 tbsp. rice
2 cloves of garlic
2 bayleafs
1 tbsp. vinegar
Salt, to taste

INSTRUCTIONS

    Peel onion and garlic cloves.
  2. 2
    After leaving beans on water over night, bring to a boil adding onion, olive oil and salt. After cooked turn into puré.
  3. 3
    Bring to a boil, and add rice, garlic and bayleafs.
  4. 4
    When ready to serve, rectify seasoning and add vinegar.
