INGREDIENTS

800 g potatoes
100 g Onion
350 g very ripe tomatoes
3 tbsp. olive oil
Salt, to taste

INSTRUCTIONS

    Wash potatoes and boil them with their peel on in water seasoned with salt.
  2. 2
    Chop onions and tomatoes roughly.
  3. 3
    Peel the potatoes when ready.
  4. 4
    Sweat the onions in the olive oil. Add tomato and allow to stew for a little.
  5. 5
    Crush the potatoes by fork and add to the stew stirring.
  6. 6
    Rectify seasoning.
