Stir Fry Chicken Noodles

INGREDIENTS

150 g stick noodles/spaghetti
2 tbsp olive oil
1 kg chicken, thinly sliced
2 small onions, chopped
3 garlic cloves, crushed
100 g green bell pepper, julienned
2 fresh red chili, chopped finely
10 cm long lemon grass, finely chopped
2 tbsp fish sauce
2 tbsp white sugar
1/2 cup fresh coriander, coarsely chopped
200 g long beans, cut into 3 cm
2 tbsp. oyster sauce
1/2 cup toasted chopped peanut
Salt, to taste

INSTRUCTIONS

    Boil noodles and drain

    Heat oil in a wok. Stir fry the chicken in batches until is brown. Remove from wok. Keep warm.

    Meanwhile, in the same oil, stir fry onion until is soft. Add garlic, chili, peanut, lemon grass, beans, bell pepper and sauté till tender.

    Place the chicken in the wok again and add sauce, sugar and noodles, stir fry. Check salt and pepper.

    Garnish with coriander leaves on top of noodles. Serve very hot
