INGREDIENTS

400 g white coral fish, cut into small stripes
50 g onion
50 g green pepper
50 g fresh mushroom
200 g pineapple
50 g tomato puree
10 g salt
5 g white pepper
1/2 cup soy sauce
75 g sugar
3 dl water
3 lemons, juiced
2 tsp. vinegar
50 g corn flour
1dl oil, for sautéing
1 tbsp. spring onion

INSTRUCTIONS

    Cut all the vegetables into julienne strips. Sauté the vegetables in a saucepan with hot oil until the strips are nearly tender.

    Boil the washed fish and refresh in cold water
  3. 3
    Add the tomato puree to the sauté. Season with salt, pepper, soy sauce and sugar. Reheat and let gently simmer.

    Add a little bit of water and lemon juice.

    Dilute the corn flour with vinegar and water.

    When boiling add the mixture to the saucepan and stir until obtain a creamy consistency (sauce).

    Correct the seasoning and add the fish and the pineapple. Toss gently and serve hot.

    Garnish with spring onion on top of dish.
