INGREDIENTS

7 large cooked prawns, shelled with tail on
2 limes, quartered one for garnish and one for juice
2 cups shredded Romaine or iceberg lettuce
1 tbsp. tomato ketchup
1 tbsp. creamed horseradish sauce
4 tbsp. mayonnaise
1 tomato, cut in wedges
1 slice egg
1/2 red cherry
Salt, to taste
Pepper, to taste

INSTRUCTIONS

    Place the prawns, mayonnaise, creamed horseradish and tomato ketchup into a mixing bowl. Add salt and pepper to taste. Stir to combine all the ingredients; make sure all the prawns are coated in sauce.

    Arrange the shredded lettuce in large wine glasses and top with the prawns.

    Decorate with a wedge of lime, tomato, a large prawn on the middle of glass and top with lettuce. Place the slice of egg on the top of middle prawn. Place the cherry on top of egg slice. Serve with separate sauce in a small sauce pot on the side of prawns cocktail.
