Spicy Prawn and pineapple Salad

200 g medium or large prawns, peeled and cooked
100 g prepared pineapple chunks
1 red chilli, finely choped
4 Little lettuce leaves
Few sprigs of coriander, chopped (for garnish on top)
2 tbsp. tomato ketchup
1 tsp. fresh lime juice
3 - 4 drops of tabasco
1 tbsp. thai fish sauce
1 tbsp. mayonnaise
Salt, to taste
1 tomato, cutted in wedges (for garnish)

    For the sauce: in a medium bowl add mayonnaise, salt, 1/2 of lemon juice, chili, fish sauce, tomato ketchup and Tabasco sauce. Mix all together with a whisk.

    Separate (keep out) 2/3 of the sauce in other sauce pot.

    In a small bowl add salt, lemon juice and prawns. Stir by hand.

    In the previous sauce bowl, the one with 1/3 of the sauce, add marinated prawns and pineapple chunk. Stir well.

    Separate the lettuce leaves, rinse and shake dry. Arrange the lettuce in the middle of two plates. Over the pineapple and prawns add the tomato wedges and chopped coriander leaves. You can add a papa-dam for well decorated.

    Serve with sauce on the side.
