Baked Coral Fish with Thai Spices

1 large Coral Fish (about 5 - 6 kg)
2 stick lemongrass, finely chopped
50 g thai ginger chopped
6 red chillies, finely chopped
60 ml fish sauce
6 garlic cloves, finely chopped
1 cup lemon juice
2 tbsp. brown sugar
50 g coriander leaves, roughly chopped
2 tbsp. olive oil
1 tbsp. red chilli powder
2 tsp. dried oregano
2 tsp. green chilli, seeded and chopped
2 large onion, half round sliced
Salt, to taste

    Wash and scale and gut the fish, remove the gills and wash again. Marinate the fish only with the juice of half a lemon and salt. Heat the oven to 200ÂșC.

    Tear off two large sheets of aluminum foil and place the fish in the center.

    For the sauce: in a medium mixing bowl add all remaining ingredients, except the coriander leaves, and add salt to taste. Spoon the mixture over the fillets and seal the foil. baked in the oven for 30 minutes or until done. serve hot and garnish with coriander leaves or spring onion. Serve with white rice.
