Tofu Bolognese Sauce

100 g Tomatoes
100 g Onion
250 g Tofu
250 g Mushrooms
Olive Oil, as needed
Cumin, to taste
Oregano, to taste
Paprika, to taste
Salt, to taste

    Squeeze water out of the Tofu, slice in cubes. Season with oregano, cumin, paprika, salt and set aside.

    Concasse the tomatoes and roughly chop them.

    Mince the onion finely.

    Slice the mushrooms.

    Stew the tomatoes and onions in a little olive oil. When half cooked set aside in a bowl, add more olive oil as necessary and grind to sauce with the aid of a mixer.

    Use the same pan to sauté the tofu and mushrooms. When the tofu is half cooked add the previously reserved tomato sauce and allow the tofu to fully absorve the flavour of the sauce.

    Serve with any pasta of choice.
