INGREDIENTS

8 medium prawns (all together 200 g)
1 tsp. fresh lemon juice
1/2 tsp. salt
1/4 tsp. white pepper
1/2 tsp. olive oil
50 g coconut powder
200 ml vegetable oil, for prawn fry
1 tbsp. flour
1 egg

INSTRUCTIONS

    Remove shells from prawns, retaining tails. Remove vein and clean well.

    n a medium bowl, place salt, pepper, lemon juice and olive oil; mix well. Add prawns and stir to coat. Remove prawns from mixture and coat with flour in a separate bowl. Prepare an egg wash and toss prawns in it. Cover egg-coated prawns with coconut powder. Tails will appear open because of the coating.

    Heat the oil in a saucepan and fry the prawns until light brown in colour. Strain the prawns from the oil and serve hot with Tartar sauce and lemon wedges.
